Silky béchamel crafted from Oyster mushrooms., folded with fresh spinach, cream, and aged parmesan, then crowned with shaved parmesan and crisp bacon. A single pearl onion hides beneath the sauce like a treasure inside the shell. Broiled until golden and bubbling, this playful homage to the Chesapeake’s beloved Oysters Rockefeller is presented in reclaimed local oyster shells.
